Freezing Baked Goods

Baked goods might be the best argument for owning a freezer. Bread, cake, cookies, and most doughs freeze with almost no penalty if they are wrapped against air and thawed at room temperature. The exceptions are crisp things — meringues, delicate pastry — that weep or go stale in the moisture. Starch retrogradation is the enemy, and the freezer is its off switch. Staling is starch molecules re-crystallizing — a process that runs fastest just above freezing and nearly stops at 0 °F / -18 °C, which is why a frozen loaf is fresher than a counter loaf on day three. Wrap against air (plastic then foil, or a zip bag with the air pressed out), slice loaves before freezing so you can toast slices straight from frozen, and thaw at room temperature wrapped so the bread reabsorbs its own moisture. Cakes freeze frosted or unfrosted — a brief firm-up freeze before wrapping keeps frosting from smearing; cookie dough freezes in portioned balls and bakes straight from frozen with one to two extra minutes. The cards cover the bakery counter by question: sandwich loaves and artisan breads, quick breads and banana bread (which many bakers swear are better after freezing), cakes and frosted layer cakes, cookies baked and as dough, brownies and bars, croissants and pastries (the fragile aristocrats — reheat from frozen in a hot oven to restore the shatter), pie dough and filled pies, tortillas, muffins, and doughnuts. Each card separates what returns to nearly-new from what returns to merely good. Two cautions repeat across the group: crisp textures (meringue, crackling crusts, streusel) soften in freezer moisture — most recover with a hot-oven refresh, and the cards say which; and filled items with custard or fresh cream inherit their fillings' no-freeze rules, so a card for the pastry is only half the answer. Windows run one to three months for delicate items and up to six for bread dough at steady 0 °F / -18 °C — safety is never the issue; eating well is.
