    The rates

What the estimate is built from

    MethodRateThe fine print
Refrigerator About 24 h per 4–5 lb, and never less than a full day The USDA notes even a 1 lb package of ground meat may take a full day. Keep it on the bottom shelf in its wrapping or on a plate.
Cold water About 30 min per pound Leak-proof packaging, cold water, changed every 30 minutes. Cook as soon as it thaws — this method leaves no refrigeration life at all.
Microwave No published rate Follow the appliance’s defrost setting and cook immediately. Some areas of the food begin to cook while others are still frozen.
Cooking from frozen About 50% longer than thawed Safe for anything the USDA says may be cooked from frozen, as long as you use a thermometer rather than the clock.

The counter is not a thawing method. Neither is warm water, a garage, or the sun. Their common failure is the same: the outside spends hours in the danger zone while the middle is still frozen, so the food is warm enough to grow bacteria and solid enough to hide it.

    Questions

    What people actually ask

Will a 20 lb turkey thaw in three days?

No. The USDA rate is about 24 hours for each 4 to 5 pounds in a refrigerator, so a 20 lb bird needs 4 to 5 days — roughly 96 to 120 hours. Three days is the cold-water answer: at 30 minutes per pound, a 20 lb turkey thaws in about 10 to 15 hours if you keep it in leak-proof packaging and change the water every 30 minutes.

What if it is still frozen on the day I need it?

A cold-water thaw is the rescue: hours rather than days. Keep the bird in its original wrapping or a sealed bag, submerge it in cold — never warm — water, and change the water every 30 minutes. Cook it immediately afterwards. If that is still too slow, cooking from frozen is safe; the USDA says to allow about 50% longer than the recipe gives for a thawed bird, and to verify the internal temperature with a thermometer rather than the clock.

Can I thaw meat on the counter?

No. The USDA lists exactly three safe methods — refrigerator, cold water, and microwave — and the counter is not one of them. The outside of the food reaches the danger zone long before the middle has begun to thaw, which is the worst of both: warm where bacteria grow, frozen where you cannot tell.

How long can it sit thawed in the refrigerator before I cook it?

The USDA tells you to cook a thawed turkey within 1 to 2 days. Treat that as the ceiling for anything large you thawed in the fridge: a thawed bird is a refrigerated perishable like any other, and it is on the same two-hour room-temperature rule as everything else. For a specific food’s own thawing and keeping notes, the food card is the place to look.

Every figure this tool computes with is published guidance, cited here rather than summarized from memory. Where the published guidance is silent — a per-pound thawing rate for a cut nobody publishes one for, or how long a nearly empty freezer really holds — the tool says so and you get a check instead of an invented number.
