The details that decide it
Eight weeks at minus twenty soften the noodles in the casserole before the tuna notices
The noodles are one of the two foods in a tuna noodle casserole, and they are the half a frozen-storage study can measure. This study made frozen raw noodles from wheat flour, at 13.78 per cent moisture and 11.74 per cent protein, passed them through an instant freezer for an hour at minus forty, and then held them at minus twenty for zero, two, four, six or eight weeks. The untreated noodles lost about 4.15 per cent of their peak viscosity across those eight weeks, with the minimum and final viscosity falling 2.13 and 2.34 per cent with it, which is the starch slowly losing its grip on the water it had taken up. The noodles built with modified starch came through colder: by the eighth week their peak viscosity read 1237 centipoise against 1110 for the plain control. In a casserole that gap is the difference between strands that still hold a bite and strands that dissolve into the sauce.
- The study froze raw wheat noodles at minus forty for an hour, then held them at minus twenty for up to eight weeks.
- Peak viscosity fell 4.15 per cent by the eighth week, with minimum and final viscosity down 2.13 and 2.34 per cent.
- At week eight the plain noodles read 1110 centipoise against 1237 for noodles made with modified starch.
It is the re-warm and re-freeze, not the cold, that dries the noodles in a leftover tray
A tray of tuna noodle casserole rarely sits at one temperature: it is frozen, carried, thawed for a portion, and pushed back in. This study walked cooked noodles through exactly that path, simulating the freezer at minus thirty, cold storage and the delivery van at minus eighteen, the supermarket cabinet at minus five and the home refrigerator at minus four. After a single freeze-thaw cycle the freezable water inside the cooked noodles had fallen by 1.77 per cent, and the water map shifted with it, the tightly bound pool growing while the free water drained away. Hardness, chewiness and gumminess all slid downwards, and the fall turned significant between the second and third cycle. A tasting panel put the same curve on its score sheet: the correlation between its overall score and the noodles hardness was 0.9839, with chewiness at 0.9704 and gumminess at 0.9759.
- The test copied a cold chain at minus thirty, minus eighteen, minus five and minus four on cooked noodles.
- One freeze-thaw cycle cut the freezable water inside the noodles by 1.77 per cent.
- The panel score tracked hardness at 0.9839, chewiness at 0.9704 and gumminess at 0.9759.
Ten freeze-thaw cycles pull the gluten of a cooked casserole noodle apart, and a little sanxan slows it
Noodles go into the casserole already cooked, and a cooked noodle has given up the raw gluten network that a frozen raw noodle still holds. This study made salt-free cooked noodles and cycled them as many as ten times, freezing at minus fifty for two hours and then at minus eighteen for forty-six, with a two-hour thaw at room temperature between rounds. As the cycles stacked up the gluten came apart: the alpha-helix content of the unsupplemented noodles fell from 15.45 to 10.74 per cent while the random coil content climbed from 19.19 to 26.53 per cent, the signature of a network unravelling. A little sanxan, a fermented polysaccharide added at 1.2 per cent of the flour weight, held it together, cutting the rise in solubility of the S3 gluten fraction to 6.08 per cent across the cycles against 26.02 per cent without it.
- Cooked noodles were frozen at minus fifty for two hours and then at minus eighteen for forty-six, ten times over.
- The alpha-helix content fell from 15.45 to 10.74 per cent and random coils rose from 19.19 to 26.53 per cent.
- S3 gluten solubility rose 26.02 per cent across the cycles without sanxan and 6.08 per cent with 1.2 per cent sanxan.
