The details that decide it
Seven freeze-thaw cycles cost the pork a slice of its weight, and a phosphate blend gives part of it back
A pork dish that is frozen and thawed more than once is the case the freezer punishes hardest, and this study ran pork patties through up to seven cycles of two days at minus twenty and a day at four degrees to watch the water leave. Four groups were compared: an untreated control, a full compound phosphate at 0.4 per cent, and two low-phosphate blends, one of 0.2 per cent compound phosphate with 0.2 per cent sodium bicarbonate, and one of 0.2 per cent sodium tripolyphosphate with 0.7 per cent arginine and 0.6 per cent sorbitol. After the seventh cycle the blend of tripolyphosphate, arginine and sorbitol held cooking loss about 15 per cent lower and thawing loss about 12 per cent lower than the control, and its bound-water fraction stayed near 2.5 per cent while the untreated control climbed. The relaxometry told the same story in the muscle: the slowest-moving water, the pool that drains as drip, gained mobility after the third cycle in every group, which is the point at which the fibres had opened enough to let it go.
- Patties ran seven cycles of two days at minus twenty and one day at four degrees.
- The low-phosphate blend held cooking loss about 15 per cent lower and thawing loss about 12 per cent lower than the control.
- Bound water stayed near 2.5 per cent in the treated groups while the control rose.
Which thaw you choose decides how much of a frozen pork cut stays in the meat
Seven thawing methods were raced against each other on the same frozen pork, each stopped the moment the centre reached four degrees: ambient air, microwave, microwave under vacuum, far-infrared, far-infrared with ultrasound, and the same pair once more with a different coupling. Water mobility was read by low-field nuclear magnetic resonance and the fibre structure by electron microscopy, and the difference that reaches the plate is drip. Microwave thawing shed the most weight of any method, 3.0 per cent, with ambient air and far-infrared close behind, while the slower and gentler routes kept more of the juice inside the fibres and left the muscle bundles less torn in the micrographs. The lesson is not that speed is bad but that a fast thaw run without any field to even it out pushes the water out faster than the fibres can hold it.
- Seven thawing routes were stopped at a four-degree centre and compared.
- Microwave thawing shed the most, 3.0 per cent, with ambient air and far-infrared next.
- The relaxometry and the micrographs separated the gentler routes from the aggressive ones.
Ultrasound tempering of frozen pork holds the water that a plain thaw lets go
Pork frozen at minus thirty-five until the core reached minus eighteen, about eighteen hours, is the ordinary domestic case, and this study tempered it by several ultrasound routes against plain water immersion. The tempering window is the dangerous one, because between 55 and 90 per cent of the water is present as crystalline ice and that is exactly when larger crystals can grow at the expense of smaller ones. Direct contact ultrasound shortened the tempering by about 21.80 per cent against the control, and the ultrasound groups preserved more of the water-holding capacity and kept the myofibrillar protein and fibre structure closer to fresh. The baseline is sobering: fresh pork loses 22.86 per cent on cooking, and ambient and plain water thawing pushed that roughly 8 per cent higher still, which is the loss a careful thaw can avoid.
- Pork frozen at minus thirty-five reached a core of minus eighteen in about eighteen hours.
- Between 55 and 90 per cent of the water sits as crystalline ice during tempering.
- Direct contact ultrasound cut the tempering time by about 21.80 per cent.
